Ingredients:
- 1 large head cauliflower, cut into florets
- 2 tbsp Piri Piri Grilling Dry Spice Blend
- 1 tbsp natural peanut butter
- 2 tbsp olive oil
- Juice of ½ lemon
- Salt to taste
- Fresh cilantro, for garnish
Instructions:
- Preheat oven: Set to 425 °F (220 °C).
- Make the marinade: Whisk Piri Piri Grilling Dry Spice Blend, peanut butter, olive oil, and lemon juice into a paste.
- Toss & coat: Add cauliflower florets and toss to coat evenly.
- Roast: Spread on a baking sheet and roast 25–30 minutes until golden and crisp at the edges.
