Ingredients:

  • 1 large head cauliflower, cut into florets
  • 2 tbsp Piri Piri Grilling Dry Spice Blend
  • 1 tbsp natural peanut butter
  • 2 tbsp olive oil
  • Juice of ½ lemon
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions:

  1. Preheat oven: Set to 425 °F (220 °C).
  2. Make the marinade: Whisk Piri Piri Grilling Dry Spice Blend, peanut butter, olive oil, and lemon juice into a paste.
  3. Toss & coat: Add cauliflower florets and toss to coat evenly.
  4. Roast: Spread on a baking sheet and roast 25–30 minutes until golden and crisp at the edges.
  5. Garnish & serve: Sprinkle with fresh cilantro and serve warm.

  • Perfect in grain bowls or wraps with hummus.
