Ingredients:
- 1 lb boneless chicken thighs, cut into 1″ cubes
- 2 tbsp Piri Piri Grilling Dry Spice Blend
- 2 tbsp natural peanut butter
- 1 tbsp vegetable oil
- 1 tsp smoked paprika
- Wooden skewers, soaked 30 minutes
- Thinly sliced red onion & cucumber, for garnish
Instructions:
- Make the marinade: Whisk Piri Piri Grilling Dry Spice Blend, peanut butter, oil, and paprika into a smooth paste. Toss chicken cubes to coat. Marinate 30 minutes (or up to 4 hours).
- Skewer: Thread chicken onto soaked skewers.
- Preheat grill: Medium‑high heat.
- Grill: Cook 3–4 minutes per side until charred at edges and cooked through (165 °F internal).
- Garnish & serve: Arrange on a platter with onion, cucumber, and extra Piri Piri Grilling Dry Spice Blend for dipping.
